Bharwan Karela Recipe

Bitter Gourd (Karela) as the name suggests are bitter in taste and usually not liked by many people. You can make Stuffed Bitter Gourd recipe. This is a spicy and tasty recipe and can also be consumed for a week. Today we will make Stuffed Bitter Gourd Recipe.

Ingredients for Stuffed Bitter Gourd

  •     Bitter Gourd - 10 or 400 gms (small in size)
  •     Oil - 4 table spoon.
  •     Heeng - 1 pinch.
  •     Cumin seeds - 1/2 tea spoon.
  •     Turmeric powder - 1/2 tea spoon.
  •     Coriander powder - 2 tea spoon.
  •     Anise powder - 2 tea spoon.
  •     Amchoor powder - 1 tea spoon.
  •     Red chilli powder - 1/2 tea spoon.
  •     Salt - 1 tea spoon (or according to the taste)

Method - How to make Stuffed Bitter Gourd Recipe

Wash the bitter gourd and peel the skin. After peeling the bitter gourd put 1/2 tea spoon salt over them and mix well. Leave the gourd for 15 minutes.

Now cut the gourd from the center leaving the bottom part. Do not make a deep cut, the bottom side should be joined so that it can be stuffed. Take out the pulp and the seeds on a plate from the gourd with the help of a knife and wash them again. Nowadays we dont get to see gourd which are too bitter in taste. But if you do not like bitterness at all, then take 1 tea spoon salt, put little inside the gourd and apply little over the surface of each of them and leave them for half an hour. Wash the gourd and prepare all the other in the same way.

Wash the gourd 2-3 times and squeeze all the water from it. Heat 1 table spoon oil in a pan and tamper heeng, cumin seeds into it. Once the cumin seeds turns brown add turmeric powder, coriander powder and anise powder to it. Stir the masala with the spoon and roast well.  Put the pulp, amchoor powder, red chilli powder and salt into the masala and mix well. Roast the masala for 6-7 minutes. The masala to stuff the bitter gourd is ready.

Stuff each gourd with the masala equally. Press the masala well into the gourd so it settles down.

Heat 3 table spoon oil in a pan and put the stuffed gourd one by one into the pan.  Cover the pan and cook the gourd on a medium flame for 6-7 minutes. Open the lid, flip the gourd, cover the pan again and cook it for another 5-6 minute. Open the lid and flip the side of the gourd from where it is not cooked. Keep on turning the sides till the gourd is cooked from all the sides and corners till they are brown. Your Stuffed Bitter Gourd is ready.

Take out the recipe in a serving bowl.

Serve it with poori, parantha, chapati or naan. You can take Stuffed Bitter Gourd recipe and poori along with you if you heading for a journey.

If you use mustard oil, then fry the gourd in mustard oil only. It enhances the taste of the recipe.
