Cashews and almonds - 1-1 tbsp (coarsely grounded)
Mawa - 1/3 cup
Green cardamom - 4 (peel and grind coarsely)
Powdered sugar - 1/3 cup
For sugar syrup:
Sugar - 1 cup
Almonds - 4 (slice thinly)
Cashews - 2 (chop in small pieces)
Green cardamom - 2
Ghee - for frying kachoris
How to make Khoya Kachori
Take maida in any bowl and mix ghee into it. With help of water knead soft dough (don't knead the dough too much until smooth, just bind the flour). For kneading this much quantity of flour approx 1/4 cup of water is used. Cover the dough and keep aside for 15-20 minutes.
Crumble mawa and add it in pan. Roast until it turns slightly brown in color. Coarsely ground cashews and almonds and mix in mawa. Take out stuffing in a bowl. Once cooled add powdered sugar and cardamom powder. Stuffing is now ready.
Preheat ghee in a wok. Within this much time dough gets set. Make small dough balls from dough. With this much quantity 9-10 dough balls can be prepared. Take one dough ball and roll into 2-2.5 inch diameter poori. Place 1-1.5 tsp stuffing over the rolled poori and lift the poori from all sides sealing the stuffing. Flatten the stuffed dough ball with your palm very gently so that stuffing doesn't spill out. Flatten the dough ball in 2-2.5 inch diameter kachori. Likewise stuff and prepare all kachoris.
When oil is medium hot place 3-4 kachoris in wok or as many as possible. When kachoris float on the surface of oil, flip the sides. Fry until kachoris turn golden brown in color from both sides. Take out kachoris in a plate. Fry kachoris on low and medium flame. It takes 10 minutes for frying kachoris at one time.Likewise fry all kachoris.
Make sugar syrup:
Place sugar and 1/2 cup water in any vessel and allow it to heat. Cook until sugar melts and after melting sugar cook sugar syrup for 2-3 more minutes. Now check sugar syrup. For this place 1-2 drops in any bowl and stick the syrup between your finger and thumb. There should be formation of thread in sugar syrup. Sugar syrup is now ready. Take off sugar syrup from flame and mix green cardamom powder into it.
Coat the kachoris with sugar syrup:
Take one one kachoris at a time and dip it in sugar syrup so that it gets nicely coated with sugar syrup. Take out kachori and place it in a plate. Likewise dip all kachoris in sugar syrup. Garnish with almonds, cashews and green cardamom. Allow the mawa kachoris to cool.
Shahi mawa kachori is ready, serve and enjoy eating. Store rest of the kachoris in air tight container and relish eating for upto 10-12 days.
Quantity of Dry fruits can be increased or decreased as per your preference and taste.
Mawa kachoris prepared in desi ghee are more luscious. But if you don't prefer eating kachoris then refined oil can also be used.
