Panjiri Recipe for New Mothers

We make many dishes for a new mother so that her health remains fit and fine like Gond ladoo, haleem ladoo, Gond paag, makhana paag, coconut paag, harira and a special panjiri which is made of kamar kass (butea gond). Kamar kass is very beneficial for new mothers after delivery as it helps recover their health.

Ingredients for Panjeeri recipe for New Mothers:-

  •     Wheat flour - 1 cup (100 grams)
  •     Dry Coconut - ½ cup (grated)
  •     Jaggery khand - ¾ cup
  •     Ghee - ¾ cup
  •     Gond (consumable) - 2 tbsp
  •     Cashew nuts - 2 tbsp (10-12)
  •     Almonds - 2 tbsp (15-20)
  •     Melon seeds - 2 tbsp
  •     Green cardamom - 5
  •     Carom powder - 1 tsp
  •     Cumin powder -1 tsp
  •     Ginger powder - 1 tsp
  •     Apricot - 4-5
  •     Pistachios - 1 tbsp
  •     Kamar kass - 1 tbsp
     

How to make Panjeeri recipe for New Mothers:-

Take half the amount of ghee in a pan and make it medium warm. Break Gond in fine pieces and fry them until they turn light brown in color and puffy. Fry all gond and take it out in a plate.

Now add almonds in pan and fry for 1- 1/2 minute until they become little brown and take them out in the same plate. Fry cashew nuts as well for 1 minute and take them out. Fry pistachios for 1 minute and place in plate. Add apricots in hot ghee and fry for 1 minute and place it in the same plate.

Now add melon seeds in the pan and cover with a lid. Stir constantly and fry until they become light brown in color. Place them separately in other plate.

Fry kamar kass just for 1 minute and take it out in separate plate. It takes seconds to fry kamar kass.

Reduce the flame to minimum and add cumin powder, carom seeds powder and ginger powder in the ghee and sauté for a while. Add grated coconut into it and cook for a while. Take it out in plate with melon seeds.

Add rest of the ghee in pan. When ghee melts completely add wheat flour and cook on medium flame until it turns light brown in color and smells good. All ingredients are now ready.

Place melon seeds, spices, all fried dry fruits and kamar kass in a mixture grinder and grind them finely to make a powder. Take out grinned dry fruits in a big bowl and add jaggery khand, roasted spices and grated coconut. Mix all ingredients nicely. Also add roasted wheat flour and green cardamom powder into it and mix thoroughly.

Panjiri for new mother is ready. Give 2-3 tbsp panjiri to new mother. If panjiri does not taste good, you also make halwa from it.

How to make panjiri halwa: take 2 tbsp panjiri and ½ cup milk in a pan. Cook until it becomes thick. If necessary add sugar and ghee into it. Soft and healthy halwa for new mother is ready.

Suggestion:

  • If jaggery khand is not available then use brown khand or powdered sugar for making panjiri. Leave dry fruits you don’t like eating.
