Bathua is a green leafed vegetable which is very beneficial for health. Raita should be taken along with meals anyways. It not only make the meals more appealing but also makes them easily digestible.
Ingredients for Bathua Raita
Bathua – 125 gm
Curd – 250 gm
Salt – 1/3 small spoon (or as per taste)
Green chili – 1 (cut finely)
Asafetida – 1 pinch
Cumin seed – half small spoon
Refined oil or butter – 1 small spoon
How to make Bathua Raita
Clean the bathua and wash it twice in clean water. Put the bathua along with half small bowl water in a utensil, and keep it for boiling. It will boil in 6 to 7 minutes and leaves will turn soft. Turn off the burner. Cool the bathua and grind it in a grinder.
Take out the curd in a bowl. Mix grinded bathua, salt and green chili in the curd. Put butter in a pan and heat it. Put the asafetida and cumin seed in the pan. After they have fried, put them in the curd. Garnish the raita with coriander.
The delicious Bathua Raita is now ready to serve and eat along with roti, rice, naan or paratha.
Asafetida and cumin seed can be roasted in the pan without ghee or alternatively you can also grind them and put them in the raita.
