Achari Bhindi Recipe

Achari bhindi prepared with pickle spices with spicy and tantalizing taste is relished by all. This sabzi can be prepared instantly and easily. 

Ingredients for Achari Bhindi

  •     Okra (bhindi) - 300 grams
  •     Mustard oil - 2-3 tbsp
  •     Green coriander - 2 tbsp
  •     Cumin seeds - 1/2 tsp
  •     Mustard seeds - 1/2 tsp
  •     Fenugreek seeds - 1/4 tsp
  •     Asafoetida - 1 pinch
  •     Turmeric powder - 1/4 tsp
  •     Red chilly powder - 1/4 tsp
  •     Mango powder - 1/4 tsp
  •     Salt - 3/4 tsp or as per taste
  •     Fennel powder - 1 tsp
  •     Coriander powder - 1 tsp
  •     Ginger - 1 tsp paste or grated
  •     Green chilly - 1 (finely chopped)
  •     Garam masala - 1/4 tsp

How to make Achari Bhindi

Wash okra twice thoroughly  and place it in sieve to dry. Take one okra, remove stalk from both ends and chop it making 3-4 pieces with 1/2 or 0.75 inch size.

Preheat oil in a wok. When oil is sufficiently hot add fenugreek seeds, mustard seeds, cumin seeds, coriander powder, turmeric powder, ginger paste and green chilly. Saute all the spices for while.

After this add add okra, fennel powder, mango powder, salt, red chilly powder and garam masala in wok and mix all spices really well until bhindi is nicely coated with spices. Saute for 2 minutes.

Cover the wok and cook sabzi for 3-4 minutes on low flame. Check later. Stir the sabzi again and cook for another 3-4 minutes.

Cover the wok and allow the sabzi to cook. Keep stirring the sabzi at regular intervals so that its doesn't get overcooked and is cooked aptly. Within 12 minute sabzi gets ready. Turn off the flame and add green coriander into it. Mix well and take out sabzi in a bowl. Scrumptious achari bhindi is ready. Serve this sabzi with chapatti, parantha or rice and enjoy eating.
