Aloo Baingan - Eggplant with potatoes

Aloo baingan sabzi prepared with potatoes and brinjal sauted in spices are very appetizing to eat. This dish can be prepared very easily and instantly. 

Ingredients for baingan aloo sabzi

  •     Brinjal - 500 grams
  •     Potatoes - 4 (300 grams)
  •     Oil - 2-3 tbsp
  •     Gree coriander - 2-3 tbsp
  •     Cumin seeds - 1/2 tsp
  •     Asafoetida - 1-2 pinch
  •     Coriander powder - 1 tsp
  •     Green chilly - 2 (finely chopped)
  •     Ginger - 1 inch piece (grated)
  •     Turmeric powder - 1/4 tsp
  •     Salt - 1 tsp (as per taste)
  •     Mango powder - 1/4 tsp
  •     Garam masala - 1/4 tsp

How to make baingan aloo sabzi recipe

Wash and peel potatoes. Soak them in water. Before making sabzi, dice the potatoes. Also, wash brinjals.

Preheat oil in a wok. Add asafoetida and cumin seed into it and saute for while. After sauteing cumin seeds, add turmeric powder, coriander powder, green chilly and ginger. Saute for few more minutes. Now add diced potatoes, half the amount of salt and stir until potatoes are sauted nicely with spices. Add 2-3 tbsp water in wok , cover and cook for 5 minutes.

Meanwhile chop brinjal in 1-1.5 inch pieces. Open the lid and check potatoes. Stir the potatoes and add brinjals chunks in the wok. Also add rest of the salt and red chilly powder. Mix all the ingredients really well. Add 2-3 tbsp more water, cover and cook for 5-6 more minutes on low flame.

Open the lid and check the sabzi. Potatoes are still under cooked. Stir the sabzi nicely and add 2 tbsp more water, if required. Cover and cook for 5 more minutes and check later. Potatoes are now soft and tender, add mango powder, garam masala and green coriander in the sabzi and mix well.

Delicious baingan aloo sabzi is now ready. Serve steaming hot aloo baingan sabzi with chapatti, parantha, naan or rice and relish eating.
