Marwari Gatta Pulao Recipe

Marwari Gatta Pulao is mainly prepared during the festivals and liked by everyone. Marwari Gatta Pulao and Gatta Dry recipe are the famous dishes of Marwari region. 

Ingredients for Marwari Gatta Pulao

Ingredients to make Gatta.

Gram flour - 100 gms.
Salt - 1/2 tea spoon.
Red chilli powder - 1/4 tea spoon.
Coriander powder - 1 tea spoon.
Garam masala - 1/4 tea spoon.
Oil - 1 table spoon.

Ingredients to make Pulao

Basmati Rice - 200 gms.
Ghee - 2 table spoon.
Cumin seeds - 1/2 tea spoon.
Green chilli - 2 (choppped)
Ginger - 1 inch long piece. (grated)
Turmeric powder - 1/6 tea spoon.
Cloves - 4
Black pepper - 10
Cardamom - 2
Salt - 3/4 tea spoon (or according to the taste)
Coriander leaves - 1 table spoon.

Method - How to make Marwari Gatta Pulao

Wash and clean the rice and soak them for 1 hour in water. Wash the rice and strain the water after 1 hour.
 
To cook rice in microwave take a microwave safe bowl and put rice, double the quantity of water of rice and salt into it. Microwave it for 12 minutes to cook.
 
If you want to prepare rice in the cooker, then take a cooker and put rice, double the quantity of water of rice and salt into it. Pressure the rice for upto 1 whistle. Take out the pressure from the cooker by tilting the whistle with the spoon and open the cooker lid. Rice are prepared.

How to make Gatta

Put all the spices and oil into the gram flour and mix well. Knead the flour with water similar to that of kneaded to make a chapati. Divide the dough into 4 equal parts and roll them into 1/2 inch of thick roll.
 
Take a vessel and boil 500 gms water into it. Put the gram flour rolls into the boiling water and cook them for 10-12 minutes on high flame. Turn off the flame. Strain the water and let the rolls cool down. You can use the strained water to knead the flour or cook food. Once the rolls cool down, cut them into half inch thick pieces. The gatta is ready.
 
Peel and grind the cloves, black pepper and cardamom.
 
Heat oil in a pan and put cumin seeds into it, followed by adding the ground masala. Roast the masala for a while and add green chilli, grated ginger and roast for 1 minute. Put the gatte and roast for 2 minutes. Now add cooked rice into the gatta and mix well. Turn off the flame. Your Marwari Gatta Pulao is ready.
 
take out the pulao in a serving bowl and garnish with coriander leaves. Serve it with pickle or chutney.
