Stuffed Potato Curry Recipe

Stuffed Potato sabzi, where potatoes are stuffed with mawa or paneer mixed with dry fruits, taste really scrumptious. This can be prepared for any special occasion.

Ingredients for Bharwan Aloo Curry Recipe

  •     Potato - 4 (boiled 80 percent, slightly stiff)
  •     Paneer for stuffing - 100 grams
  •     Black pepper powder - less than 1/4 tsp
  •     Cashews nuts - 8 to 10
  •     Maida - 2 tbsp
  •     Tomato - 4 (300 grams)
  •     Green chilly - 2
  •     Ginger - 1 inch
  •     Cream - 1/2 cup
  •     Green coriander - 2 to 3 tbsp (finely chopped)
  •     Oil - for frying
  •     Cumin seeds - 1/2 tsp
  •     Asafoetida - 1 pinch
  •     Turmeric powder - 1/4 tsp
  •     Coriander powder - 1.5 tsp
  •     Salt- less than 1 tsp
  •     Red chilly powder - 1/4 tsp
  •     Garam masala - 1/4 tsp

How to make Stuffed Potato Curry Recipe

Peel the boiled potatoes and cut them in two half. Hollow the potatoes with help of a peeler so that these can be stuffed with filling. Keep aside the potato scarp in a plate.

Make stuffing:

Crumble the paneer and add black pepper powder, some salt, green coriander and chop the cashews in small pieces and add them as well. Mix all the ingredients really well. Stuffing is ready. Take one potato, stuff the filling in it. Likewise stuff all potatoes.

Preheat oil in a wok. Make a thick batter of refined flour. Now dip the stuffed potato in refined flour batter and place in oil for frying. Place as many potatoes as possible in the wok and fry until they golden brown in color from all sides. Take out the fried potatoes in a plate and likewise fry all potatoes.

Take another wok and add 2 tbsp oil into it. When oil is sufficiently hot add cumin seeds. After sauteing cumin seeds for while add asafoetida, turmeric powder, coriander powder and saute the spices on low flame. Now add tomato-ginger-green chilly past, red chilly powder and stir the masala constantly. Saute the masala until oil starts separating from it.

After sauteing the masala, add cream into it and stir the masala constantly until it starts simmering.

When it starts boiling, add some water into it, garam masala, salt, green coriander, cover and cook on low flame for 4 to 5 minutes. Gravy is prepared nicely, now add place the stuffed potatoes into it and mix well.

Stuffed potato sabzi is ready. Take it out in a bowl and garnish with some green coriander. Serve steaming stuffed aloo sabzi with chapatti, parantha, naan or roti and relish eating.

  •    You can make gravy with cashews, poppy seeds, melon seeds, coconut, ararot or gram flour as per      your taste.
