Ingredients for Veg Nuggets
Potato - 200 gms. (3 potatoes)
Carrot, Cabbage - 1 cup (chopped)
Capsicum, Cauliflower - 1 cup (chopped)
Green Chilli - 1-2 (chopped)
Ginger - 1 inch long piece (grated) (you can also use 1 tea spoon ginger paste)
Red chilli powder - 1 pinch
Corn ctartch - 2 table spoon.
Peanuts - 2 table spoon (roasted and peeled)
Salt - 3/4 cup (according to the taste)
Sooji or bread crumbs - 1/2 cup
Oil - to fry veg nuggets.
Method - How to make Veg Nuggets
Boil the potatoes and mash it or you can also grate them. Mix all the chopped vegetables, spices, green chilli, ginger, red chilli, peanuts and salt well with each other. Your mixture to make veg nuggets is ready.
Make a thin batter of corn starch by mixing it in water. Take 2 table spoon corn starch and 3 table spoon water.
Take small portions of the mixture and make round balls of it or roll it into any desired shape and size. Wet the nugget with corn starch batter and dust them with bread crumbs. Prepare as many nuggets as you can from the mixture in the same manner.
Once all the nuggets are ready, put them in a plate and refrigerate for 40-50 minutes to set.
Heat oil in a pan and put 5-6 nuggets into it. Turn and flip the nuggets while frying and fry till they turn crispy brown. Now spread a napkin over a plate and put the fried nuggets on it. Fry all the nuggets in the same manner.
Your hot and crispy Veg Nuggets are ready. serve them with coriander chutney or tomato ketchup.
You can also use sooji to dust the nuggets. The colour, taste and texture of nuggets covered in sooji is different from that of covered in bread crumbs.
You can use any green vegetables according to your taste and preference. You can also add onions and garlic to the mixture.
